You’ll love these easy Banana Muffins!

Yes! Trial and error has created these amazing easy muffins! 😀

Not going out…

So, with not going out to get shopping so much, we have once again been baking at home (hooray, less plastic too)! Every day (or couple of days), I ask ‘What shall I bake today?’ As we had a few bananas that were starting to get a bit ripe, I gave the options banana bread or banana muffins. However, when I looked at the recipes already on here, I realised that the ingredients might be a bit difficult for everyone to access, so I set about making an alternative!

These will disappear quickly!

What do I need?

Hopefully, this recipe can be made right now as they are made with basic storecupboard ingredients! If linseeds/flaxseeds is something you don’t have (it is a great thing to have in stock!) then feel free to sub whatever you usually use as an egg replacer (or use an egg if that’s your thing)! You can of course, add a handful of nuts (pecans would work great) or a sprinkle of chocolate chips (yes please) into the batter before baking. Here’s the recipe!


Banana Muffins

Delicious muffins made with store-cupboard ingredients!

Gather
  • 1 tablespoon Ground flaxseed (linseeds) (or sub 1 egg)
  • 3 tablespoons water (not needed if using an egg)
  • 75 g butter (we used Vitalite)
  • 100 g sugar (white, brown, or coconut)
  • 200 g bananas mashed (the riper the better) (approx 2 medium)
  • 1/2 teaspoon vanilla extract
  • 200 g plain flour
  • 5 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon mixed spice
Prepare
  1. Put the ground flaxseed in a glass, add the water and mix. Set aside.

  2. In a large bowl, cream the butter and the sugar until well mixed.

  3. Add the banana and vanilla and gently mix through.

  4. Tip the flour into the bowl and add the baking powder, bicarbonate of soda and mixed spice. Gently fold this through until everything is incorporated.

  5. Spoon the mixture into muffin cases (3/4 full) and bake at Gas Mark 5 (375f / 190c) for 20-25 minutes. They are cooked when a skewer inserted comes out clean.

  6. Enjoy!
