Put on Purple… served with ice-cream!

I wasn’t intending to post today as I should really have ‘one’ rest day in my – “I’m having a rest week”! Never mind – maybe at the weekend I can get some rest! 😀

So, why am I posting and what’s all this about purple? Well, the month of May is Lupus month (as well as Fibromyalgia and M.E. awareness month too) and today (Friday 20th May) is Put On Purple for Lupus day! 😀

Okay, so I’m in the wrong country as this is a USA event but hey – Lupus is Lupus and the more people who become aware of it the better! 🙂 For those of you who are unaware, Lupus is a chronic autoimmune disease, which basically means it is a long term condition in which the body attacks itself! Yes, the body can’t distinguish between invaders and normal healthy tissue, so it just attacks and destroys healthy tissue! Thanks Lupus! 🙁

Most people with Lupus don’t look sick! Do I look sick??? No, most of the time I don’t! 😀 BUT… that doesn’t mean that people with Lupus don’t have pain, inflammation, fatigue and a whole host of hidden symptoms. Can you tell if someone has Lupus? No. Can you catch Lupus? No. Can you tell if someone is having a bad day? No! Not generally!

As we’re doing purple, how about a bit of as-purple-as-I-can-naturally-get ice-cream to go with that? Here’s a very quick, nutritious and delicious dairy free ice-cream…

Purple (ish) Ice-cream (vegan & Free-From)

  • Servings: 1-2
  • Difficulty: easy
  • Print page

Gather

  • A frozen banana
  • A handful of frozen berries – the darker the better
  • A sprinkling of raisins
  • A dash of flaked almonds

Prepare

  1. Put the banana & berries in a food processor or blender and pulse until you have a creamy consistent mixture. Transfer to a bowl.
  2. Stir through raisins and almonds.
  3. Serve & enjoy!

Serve & Store

  • Best served immediately.
  • Can be frozen but allow to soften before serving.
  • Serve in a cone, with sauce, add extra fruit, sprinkles, anything!

Of course,  as I’m trying to create some awareness around Lupus 😀 I’m going to share this ice-cream at a couple of parties! Firstly with the fabulous Angie at Fiesta Friday co-hosted this week by Loretta @Safari of the Mind and Linda @ Fabulous Fare Sisters  and also with the lovely Deborah at the Plant Based Potluck Party (sorry Deborah for not coming along the last few weeks!)
